The Marvellous Melting Chocolate Cookies

This cookie recipe is my brother’s invention. He loves making these cookies all the time. These cookies are soft and sweet. They melt slowly in your mouth and comfort you. I once made these cookies for Mrs Boursier AND the class but Mrs Boursier had almost the whole box to herself. So, I had to make another box of cookies for the rest of the class. They were gobbled up in 30 seconds!

- • 125 g butter
- • 1 egg, beaten
- • 225 g sugar
- • 1 tsp vanilla extract (sugar)
- • 225 g self-raising flour (or flour + 1/2 packet baking powder)
- • 200 g chocolate chips

- 1. Preheat oven at 180°C.
- 2. Cream butter and sugar together. Add egg and vanilla.
- 3. Sift in flour. Then add the chocolate chips.
- 4. Roll into walnut-sized balls.
- 5. Place on greased baking sheet.
- 6. Bake for 7 to 10 minutes.
- 7. Leave to harden for a minute before transferring to a tin or box. Now all you need to do is let the cookies melt in your mouth slowly. But make sure Mrs Boursier isn’t anywhere near you!
