Luca’s chocolaty cake

This cake is a marvellous one. It is a secret recipe told to me by a friend. It all started when I was at a party with my German friend: Luca. When I ate his cake it was extremely good, so much that I couldn’t stop myself from asking him how he made such an amazing chocolate cake. Then he told me his secret that he told to no one else and this is it:

Ingredients: • 1 packet German chocolate cake mix that we can find on internet • 1 cup buttermilk • 1/2 cup vegetable oil • 3 large eggs • 1 teaspoon pure vanilla extract

For the Coconut-Almond Frosting: • 1/2 cup butter • 1 cup sugar • 1 cup evaporated milk • 2 eggs, beaten • 1 tablespoon vanilla • 1 (7 oz. package) sweetened desiccated coconut • 1 cup sliced almonds

Method: 1. To begin, preheat your oven to 180°. 2. Mix the cake mix, oil, eggs and vanilla in a large mixing bowl on low speed for one minute, until this delicious mixture combined. Beat at medium speed for two minutes more. 3. Pour all the mixture in a greased and floured 13x9 cm baking dish. Bake for 38 to 42 minutes until the cake springs back when lightly pressed. 4. Allow your cake to cool completely on a wire rack before frosting. 5. Here’s a little tip Luca told me: he told me that he liked to line his round cake pans with parchment paper before adding batter for an easier removal from the pan. Coconut-almond frosting: 1. Combine butter, sugar, evaporated milk and the beaten eggs in a saucepan. Cook it over medium heat, stirring constantly, for about 12 minutes or until thickened. Add also vanilla, coconut and almonds. Cool to room temperature before frosting the cake 2. Here’s another tip Luca told me: He told me he likes to warm up the butter, sugar and evaporated milk before he adds them to the saucepan. 3. Spread the coconut-almond frosting on your cake. That’s the end of the secret recipe. Enjoy your cake!!!
